This Taco Soup is all the best parts of tacos, now in bowl form! I just KNEW there had to be another way to eat more tacos, and I think I found it! The best part is that this hearty soup recipe comes together in mere minutes. As fast as you can open, dump and heat. Great for a weeknight with some tortilla chips and some cold weather.
Ingredients for amazing taco soup
- Diced yellow onion
- Diced garlic (I like to use the pre-chopped garlic in the jar, such a time saver!)
- Ground beef - feel free to use ground turkey if you'd like
- Mild green chile
- Large can of diced tomatoes
- Drained and rinsed black beans
- Tomato sauce
- Taco seasoning
- Corn kernels - I like sweet corn, either frozen or in a can
- Diced bell peppers
- Beef broth
How to make taco soup
- In a large stock pot, add diced onions. Cook until translucent and fragrant, about 3 minutes.
- Add garlic and cook for 1 minute more.
- Add beef and cook until no more pink remains. Drain fat from beef in a strainer and return to the stock pot.
- Add green chile, diced tomatoes, black beans, tomato sauce, taco seasoning, corn, bell peppers and beef broth.
- Cook on medium heat until steaming and hot all the way through. Stir frequently.
- Scoop hearty portions in large bowls. Top off with fresh avocado, sour cream, cilantro and cheese. Serve with tortilla chips and chilly weather. Enjoy!

Taco Soup
Like eating a hot taco in a bowl! Delicious and filling, perfect for a chilly weeknight.
Servings: 8 servings
Ingredients
- 1 yellow onion diced

- 1 28 oz can diced tomatoes
